Don't get confused and think i am sticking up for this guy. I do not think he should be running a bartending school. many of his many of his recipes are wrong, and no PROFFESIONAL bartender uses a jigger.

The exact measurements are up to you, although be careful of making the drink too sweet. This guy needs to take more care - always taste what you are making and garnish with style!

If you do your research and keep all the extra bullshit out like grenadine and pineapple juice here is what you get basically: -bucket glass of ice (snow cone crushed if you can) -1oz white rum (Bacardi) -1oz dark rum (Myers) -1/2oz or 1oz Orange Curacao (to your taste) -freshly made sweet&sour (lemonade) -squeezed lime and 1/2oz orgeat optional you can shake and pour or just stir in the glass and you're done. Enjoy!

Traditional Grenadine syrup:Squeeze 1 cup fresh pomegranite juice (you can use pom if you prefer)simmer over low heat and add 2 cups good sugar (I use demerrarra sugar to make mine) until desolvedadd 1 sprinkle hibiscus blossoms (to darken color)1 tsp pomegranite molasses1/2 tsp orange blossom waterbring to a soft boil for 2 minuteschill and strainYou can add a shot of overproof vodka to keep it longer also

I know how to free pour but don't because you can always make mistakes that adversely affect the taste of your drinks. When using a jigger, I KNOW that the proportions are correct.That being said, the rest of your comment is spot on: this guy is a tool and should have NOTHING to do with training people in the craft of bartending.

[..YouTube..] Finding Orgeat can be difficult but there are ways to do it. Just visit fee brothers website and order it online. Not the best orgeat in the world but by far the easiest to get, and its definetly worth it. Nothing beats a well made Mai Tai, oh and don't forget to garnish with a sprig of mint =)
